To know why that matters, it takes a bit of a 201 lesson: coffee is known as a bean, but it’s actually the seed of a cherry. This living seed holds 400 of the 1,000+ components that directly contribute to the flavor and aroma profiles in brewed coffee. And like any living thing, heat, humidity, and pressure wears it out, leading to the dissipation of the coffee’s flavor and aromas. In order to get from harvest to roast so quickly, Devoción packs and sends the green beans directly from their facility in Bogotá, Colombia to their roaster in Brooklyn, New York just the day after the coffee cherries have been picked from remote, hand-selected Colombian farms.
